Easy Tex-Mex Rollups Recipe

Look no further than this easy Tex-Mex Rollups recipe! I adapted this from a Pampered Chef recipe over 10 years ago, this dish is a crowd-pleaser and can be made with ground beef or ground turkey. Let's get cooking!

Ingredients:

  • 1 lb. ground beef or ground turkey

  • 1 package of Siete taco seasoning

  • 1 bell pepper, chopped

  • 1/2 can of corn or 2 fresh corn cobs, stripped

  • 2 cups shredded cheese

  • 6 burrito-sized tortillas Tortilla Recipe

  • Olive oil for brushing

Instructions:

1. Preheat your oven to 450°F (230°C).

2. In a large skillet, cook the ground beef or ground turkey over medium heat until browned. If using ground turkey, make sure it is fully cooked through.

3. Add the Siete taco seasoning to the cooked meat according to the package instructions. Stir well to coat the meat evenly with the seasoning.

4. Next, add the chopped bell pepper and corn to the skillet. If using fresh corn, make sure to strip the kernels off the cob before adding them. Cook for a few minutes until the bell pepper is slightly softened.

5. Reduce the heat to low and add the shredded cheese to the skillet. Stir until the cheese is melted and well combined with the meat mixture. The cheesy goodness will add a delicious flavor to the rollups!

6. Take one burrito-sized tortilla and spoon a generous amount of the meat and cheese mixture onto the center. Fold the sides of the tortilla over the filling, then roll it up tightly, starting from the bottom. Repeat this process with the remaining tortillas and filling.

7. Place the rolled-up tortillas onto a baking sheet lined with parchment paper or a silicone mat. Brush the tops of the rollups with olive oil to give them a golden, crispy finish.

8. Bake the Tex-Mex rollups in the preheated oven for about 20 minutes, or until they are heated through and the tortillas are crispy.

9. Once baked, remove the rollups from the oven and let them cool for a few minutes. Serve them warm with your favorite toppings such as salsa, guacamole, or sour cream.
