One of the things I decided in 2023 was to make our own bread products, and after some experimentation, I finally came up with the perfect sourdough discard tortilla recipe that my family absolutely loves.   • 7g salt

  • 100g sourdough discard

  • 56g softened

  • 100g water

Instructions:

  1. In a large bowl, mix the flour and butter together by using a pastry dough cutter or fork to cut the butter into the flour until crumbly.

  2. Add the sourdough discard, water, and salt to the bowl. Mix until a soft dough forms.

  3. Knead the dough for a few minutes until it becomes smooth and elastic.

  4. Divide the dough into 6 equal portions and shape them into balls.

  5. Cover with a light kitchen towel or plastic wrap and let the dough rest for 20 minutes- 2 hours room temperature. You can also let the rest in the fridge for up to 48 hours just transfer balls to airtight container.

  6. Using a rolling pin or a tortilla press, flatten each ball into a thin, round tortilla.

  7. Heat a skillet over medium-high heat and cook each tortilla for about 1 minute on each side, or until golden brown spots appear.

  8. Repeat the process with the remaining dough balls.

  9. Serve the tortillas warm with your favorite fillings or use them as a base for tacos, quesadillas, or wraps. They can be stored at room temperature for up to 5 days and freeze up to 2 months.
